I want to share a few of my favourite things I love doing/ eating at the moment.
- Lemon Cheesecake Overnight Oats.
I like to be prepared and breakfast is one of my favourite meals of the day and this is currently my go to breakfast. To make, simpy mix oats, with ½ cup of water, ½ cup of milk, lemon juice, honey and maple syrup. Heat this in the microwave for 1 minute 30 seconds. For the topping, mix greek yoghurt and maple syrup. Spread this over the oats. Add two slices of lemon on the top and also some desiccated coconut around the side. Put this in the fridge overnight.
- Daily Walks in the park.
With the sun shining, nothing beats taking a walk in the park, looking at the plants/ flowers and clearing your head.
